Rice Pancakes

1 medium egg, separated
1 tablespoon buttermilk
2 teaspoons flour
Artificial sweetener to equal 1 teaspoon sugar
1/4 teaspoon baking powder
1/8 teaspoon soda
Dash of cinnamon
Dash of salt
1/2 cup cooked rice
1/4 teaspoon vanilla

In small bowl, beat egg white till stiff but not dry. In another bowl, beat egg yolk and add remaining ingredients. Fold in egg white and fry in a nonstick skillet (or a pan coated with cooking spray). These pancakes are very tender and hard to turn if made too large. Fry on both sides till set or they appear done. Makes 8 small cakes, 2 1/2 to 3 inches in size. (Test note: Very unusual pancakes, but very good too. In testing, we used 1 packet of Equal for sweetener.)

Apple Dip

Sliced apples
Lemon juice
1 8-ounce package cream cheese
1/2 cup brown sugar
1/4 cup sugar
1 teaspoon vanilla

Slice apples ahead of time; dip in lemon juice to prevent browning. Mix remaining ingredients (cream cheese, sugars and vanilla) together until smooth and creamy. Refrigerate before serving. (Test note: This excellent, easy-to-prepare dip is very tasty with apples, but can be used for most any fruit. Kids would even enjoy making this. This recipe is a great take-along for potlucks.)

Sugar-free Tapioca Dessert

1 3 ounce box Jell-O vanilla-flavored* pudding and pie filling (sugar-free), not instant
1 tablespoon quick tapioca
2 1/4 cups milk (skim)
Sliced bananas (2 to 3) or other fruit
1/2 teaspoon vanilla extract (optional)

Combine pudding, tapioca, milk and vanilla in quart-size or larger microwave-proof container. Microwave on High power for 3 minutes. Stir. Microwave for 2 more minutes. Stir again; microwave for 12 minute or until mixture boils. Remove from oven. Stir then set aside to partially cool. While pudding is still warm, spoon over fruit in serving dishes. Makes 4 to 6 servings. (Test note: This pudding was very easy to prepare and very tasty. We used vanilla-flavored pudding in testing, but you could use another flavor instead.)
