INGREDIENTS
  • 4 cups Rice Krispies
  • 1 teaspoon paprika
  • 1 Cass-Clay egg
  • 3/4 cup Cass-Clay milk
  • 3/4 cup flour
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon poultry seasoning
  • 1 (3 lbs.) chicken, cut up
  • 3 tablespoons melted Cass-Clay butter
INSTRUCTIONS
  1. Crush Rice Krispies (about 2 cups crushed).
  2. Place in shallow dish or pan (we used a pie pan in testing).
  3. Stir in paprika. Set aside.
  4. In a second shallow dish or pan, beat egg and milk till foamy; add flour, salt, pepper and poultry seasoning. Mix until smooth.
  5. Dip chicken in batter. Coat with crushed cereal.
  6. Place in single layer, skin side up, in foil-lined shallow baking pan.
  7. Drizzle with melted butter.

Bake in a 350-degree oven about 1 hour, or until chicken is tender. Do not cover pan or turn chicken while baking.

Yield: 6 servings. (Test note: This was easy to prepare and very tasty.)
